Our beautiful Helen! The shortcrust base is topped with two layers of genoise sponge, sandwiched together with a delicious cocoa cream containing chunks of pear. This is covered with a pear cream with more chunks of fruit and another layer of genoise sponge. The gateau is crowned with pear cream rippled with pear fruit preparation, dark cocoa ganache and grated chocolate. Fruit content 21%.
